PIERRE, SD: Beef took center stage at both University of South Dakota (USD) and South Dakota State University (SDSU) as Dr. Mike Roussell, PhD, a nationally recognized author, speaker and nutritional consultant to the Build Your Base with Beef program, spoke to students on February 26th and 27th, 2020. Roussell provided student-athletes methods in which they can transform complex nutritional concepts into practical nutritional habits and strategies such as the inclusion of high-quality protein, like beef, in the diet.
Educational partnerships like this help demonstrate the role and value that beef has in the diet. “Beef is a high-quality or “complete” protein that contains all the essential amino acids in the appropriate amounts we need that is highly digestible,” states Holly Swee, SDBIC’s Director of Nutrition. “Protein’s main role is to build and repair body tissue, like muscles and organs; support the immune system; and help move more vitamins, minerals and other nutrients throughout the body. On average, a 3-ounce serving of lean beef is only 170 calories, yet it provides 10 essential nutrients to the diet, including iron, zinc and B vitamins. These essential nutrients ultimately help athletes to stay healthy so they can train and compete to their potential.”
During both events the South Dakota Beef Industry Council (SDBIC) and the Sanford Sports Science Institute, along with Dr. Mike Roussell, provided digital resources for the students to put this information in to practice. Clete McLeod, USD’s Head Strength and Conditioning Coach expands, “Having beef available is a great asset of the program, but the steps that the South Dakota beef council and Sanford have taken forward in educating our athletes in giving them resources that are going to be lifelong lessons, that’s the part that I’m really excited about and I think that’s where we’re really, really going to benefit the most.” Both students and coaches value the partnership with each of the organizations, as well as the support provided by the beef checkoff and South Dakota's beef producers.
The SDBIC’s Build Your Base with Beef partnership with the Sanford Sports Science Institute and Sanford Health expanded the pilot program and its resources to the collegiate level during the 2019/2020 sports seasons.
